Most cakes and pies are filled with tons of sugar, saturated fat and artificial sweeteners. Zucchini Bread is a great option for a more healthy dessert. Substituting healthy foods in the place of unhealthy foods is a great way to help you reduce your calorie intake. Try this dessert next time you have family or friends over or just when you have a craving for something sweet!
Here is the recipe breakdown.
2 cups of brown sugar
1 cup of unsweetened apple sauce
2 cups of raw shreded zucchini
3 cups of flour
2 tablespoons of baking soda
1/4 table spoon of baking powder
1 tablespoon of cinnamon
2 handfuls of raisins
Step 1: Preheat oven at 350 degrees
Step 2: Mix the dry ingredients in a bowl (with exception of the raisins)
Step 3: Mix the wet ingredients in a larger, separate bowl (make sure it is big enough to fit the dry ingredients also)
Step 4: Slowly add the dry ingredients to the wet ingredients bowl while mixing the two together
Step 5: Stir in the raisins
Step 6: Grease loaf pans with cooking spray
Step 7: Fill 3 medium size loaf pans (or 2 large) half way
Step 8: Bake for 1 hour, test to see if they are done by sticking a tooth pick into the bread. If the tooth pick comes out wet, it needs to cook longer. Cooking times will vary slightly depending on the oven.
Step 9: Once they have finished cooking, take them out and let them cool (approximately 20 minutes)
Step 10: Cut, serve and enjoy!
